Cinnamon Maple Quinoa Cereal
1 1/4 cups water
1 cup quinoa
1 Tbsp. ghee
1/2 cup sweet potato puree
1 Tbsp. pure maple syrup
1/3 cup almond or rice milk
1/4 tsp. cinnamon
1/4 tsp. cardamom
Pinch of sea salt
Roasted fennel seeds
In a small saucepan bring the water to a boil.
Rinse quinoa and strain.
Add quinoa to boiling water and reduce heat to simmer.
Cook for about 10 minutes, uncovered.
Remove from heat, cover, and let sit for 5 minutes.
In a separate pot, add ghee, sweet potato puree, maple syrup, milk, spices, and salt.
Cook on low heat just long enough to warm and mix ingredients then add quinoa.
Serve in a bowl with your favorite toppings and enjoy a nice, warm, nourishing breakfast!
